Got to do a post on this divine Niçoise salad with @chalk_stream and their absolutely gorgeous hot smoked trout. It's a constant reinvention and evolution working in food, I love finding new things, and some of you may remember the potted trout we did in our Lockdown boxes. 🙌🏼When you're on site, you need really good quality ingredients as the elements only come together as we're plating!!😯 you don't need too much to make these simple yet delicious ingredients, get the best out of each other.. English baby Gem lettuce, quails eggs (I know the team aren't thanking me for peeling so many of the blighters!!!) baby new potatoes, a few green beans, I like to use pitted Kalamata olives, then add a good house made dressing and boom, winner 💥!!!
